Liam’s tartiflette with rib of beef

Chef’s note:
Instead of cooking your dad a roast on Father’s Day, why not cook a rib of beef with tartiflette, a naughty French potato dish with bacon lardons and Reblochon cheese? Trust me, it’s delicious!

First things first, preheat your oven to 200°C/Gas Mark 6.

Gently boil your sliced potatoes in salted water until tender. Drain, and set aside to cool.

In a frying pan, fry your bacon lardons, onion, and garlic until lightly golden; you can add a pinch of thyme or mixed herbs if you like.

Pour in your double cream, bring to the boil, then remove from the heat.

Now for the fun part…!

In your favourite casserole dish or oven-safe saucepan, layer all of the potatoes, sprinkling with salt and pepper as you go. Pour the creamy, bacony, oniony mixture over the top.

Finally, place the entire wheel of Reblochon in the centre.

Bake in the oven for 15-20 minutes until beautifully golden.

While the tartiflette is baking, cook your steak to your liking and rest before serving.

Once everything is cooked, serve together and enjoy
