Preheat the oven to 140°C fan oven/275°F/gas mark 1.

Line a loaf tin with baking paper.

In a saucepan, add the fruit, sugar, butter and water. Simmer slowly for 10 minutes until the fruit is swollen,
then allow the fruit to cool. -
Add the eggs to the fruit mixture and stir in the sifted flour.

Place the cake mixture into the tin and scatter with almonds.

Bake for 1 hour 30 minutes or until cooked through – I always check mine after 1 hour.

Leave to cool, make a cuppa, cut a slice – and enjoy!
