Description

Recipe makes two cakes.
Chris Page shares his family recipe for Granny P’s boil and bake fruit cake

Ingredients
  • 250 grams self-raising flour
  • 340 grams mixed fruit
  • 1 small tub of glacé cherries (halved)
  • 110 grams butter
  • 2 eggs (beaten)
  • 150 milliliters water
  • 110 grams brown sugar
  • ¾ tablespoons sherry
  • 1 handful of flaked almonds ((optional))
Instructions
  1. Preheat the oven to 140°C fan oven/275°F/gas mark 1. 

  2. Line a loaf tin with baking paper.

  3. In a saucepan, add the fruit, sugar, butter and water. Simmer slowly for 10 minutes until the fruit is swollen,
    then allow the fruit to cool.

  4. Add the eggs to the fruit mixture and stir in the sifted flour. 

  5. Place the cake mixture into the tin and scatter with almonds. 

  6. Bake for 1 hour 30 minutes or until cooked through – I always check mine after 1 hour.

  7. Leave to cool, make a cuppa, cut a slice – and enjoy!
