
dark chocolate, sea salt & cardamon fudge truffles

Samantha Mattocks, aka MasterChef 2019 contestant and The Delicate Diner, shares two easy chocolate recipes – perfect to enjoy over Easter or to make as gifts.
Chocolate mousse is my all-time favourite dessert – I can never resist it on a menu, and it evokes memories of my childhood. This rich and luxurious version can be made with or without the brandy. The fudge truffles are a quick and easy recipe and they make perfect gifts – just wrap in parchment paper and tie with a ribbon. Perfect for Easter!

Line a deep, rectangular baking tin with parchment paper, making sure that the paper comes up the sides.

Empty the condensed milk and chocolate into a microwavable bowl. Cook on high for one minute - and then allow to sit for one minute.

Remove from the microwave and stir well until the chocolate has melted. If needed, return to the microwave on 30 second blasts until all the chocolate has melted.

Stir in the vanilla extract, a pinch of salt to taste, plus the cardamom. Pour the mixture into the lined baking tin, sprinkle more salt on top to taste and cover. Put into the fridge to set, ideally overnight.

Once chilled, lift the parchment out of the baking tin and cut the fudge truffles as required.
