Samantha Mattocks, aka MasterChef 2019 contestant and The Delicate Diner, shares two easy chocolate recipes – perfect to enjoy over Easter or to make as gifts. 

Chocolate mousse is my all-time favourite dessert – I can never resist it on a menu, and it evokes memories of my childhood. This rich and luxurious version can be made with or without the brandy. 

Ingredients
  • 180 grams dark chocolate
  • 60 grams double cream
  • 60 grams milk
  • 3 large eggs (separated)
  • 25 grams caster sugar
  • 1 tablespoon brandy
Instructions
  1. Put the chocolate into a bowl and set aside.

  2. Put the cream and milk into a saucepan over a medium heat. As it just starts to boil, remove from the heat and pour over the chocolate, stirring well until all the chocolate has melted.

  3. Take the egg whites and put into the bowl of a mixer and whisk until they are firm but not stiff. Slowly add the sugar and whisk again until they become firm and meringue-like.

  4. Fold the eggs yolks, one by one, into the chocolate mixture until combined. Then carefully fold in the egg white/sugar mixture being careful not to knock out the air from the whites. Finally, add the brandy and stir well.

  5. Take four individual serving dishes and fill with the mousse mixture.

  6. Cover and refrigerate for at least four hours.
