chocolate & brandy mousse
Description
Chef’s note:
Samantha Mattocks, aka MasterChef 2019 contestant and The Delicate Diner, shares two easy chocolate recipes – perfect to enjoy over Easter or to make as gifts.
Chocolate mousse is my all-time favourite dessert – I can never resist it on a menu, and it evokes memories of my childhood. This rich and luxurious version can be made with or without the brandy.
Ingredients
Instructions
-
Put the chocolate into a bowl and set aside.
-
Put the cream and milk into a saucepan over a medium heat. As it just starts to boil, remove from the heat and pour over the chocolate, stirring well until all the chocolate has melted.
-
Take the egg whites and put into the bowl of a mixer and whisk until they are firm but not stiff. Slowly add the sugar and whisk again until they become firm and meringue-like.
-
Fold the eggs yolks, one by one, into the chocolate mixture until combined. Then carefully fold in the egg white/sugar mixture being careful not to knock out the air from the whites. Finally, add the brandy and stir well.
-
Take four individual serving dishes and fill with the mousse mixture.
-
Cover and refrigerate for at least four hours.
