spring

the season after winter and before summer, in which vegetation begins to appear

There is no doubt that spring has arrived. Everywhere you look, nature is beginning to flourish as verges are swathed in daffodils, trees are slowly coming back to life after winter hibernation, and the dawn chorus is back.

The colours of spring are very much reflected in this edition of nourish, with the recipes, in particular, taking on a lighter look after the earthy feel of winter. As we go to print, the first wild garlic is beginning to appear, forced rhubarb has already been enjoyed, and we know that early asparagus will be available by the end of the month.

This feeling of flourishment is evidenced through our cover story under the spreading Chestnut tree. Chestnut own a total of 16 pubs and restaurants with rooms across Norfolk, Suffolk, Cambridge, and Essex, and while each is unique in terms of menu and look, they all have in common a warm and wonderful welcome.

That warm welcome is also found in Bury St Edmunds, where the nourish team spent a happy couple of days enjoying all that this cathedral town has to offer as well as the comforts of The Angel Hotel. Bury St Edmunds, and the surrounding area, is a beautiful part of our region and we will be exploring it in more depth over the coming months.

Looking ahead, we are into an exciting time of year. With Mothering Sunday just around the corner and Easter not far behind, we also have the Platinum Jubilee to look forward to. Many of the recipes in this issue can be enjoyed during these celebrations – don’t forget to tag us using #eatnourishdrink if you make these or other nourish dishes!

Our nourish family continues to grow and we will be sharing more on our website in between print editions, to do be sure to bookmark www.eatnourishdrink.com and follow us on social media so you never miss the latest news from your favourite region.

Enjoy the wonderful features within these pages. We have had some amazing feedback since nourish was launched last September, and an oft-repeated comment is that this is magazine you can dip into time and time again and enjoy something different each time.

Happy dipping!
