Anne’s Pound Cake

Ingredients
    For the cake
  • 200 grams butter (softened)
  • 200 grams caster sugar
  • 3 eggs
  • 200 grams self-raising flour
  • 1 teaspoon baking powder
  • 3 tablespoons milk
  • 1 tablespoon vanilla paste
  • For the icing
  • 125 grams icing sugar
  • 1 tablespoon vanilla paste
  • 3 tablespoons water
Instructions
  1. Line a loaf tin with parchment paper – we use 19cm x 9cm x 6cm. 

  2. Put all the cake ingredients into a bowl and beat together, using an electric hand whisk or a wooden spoon, until smooth and combined. Pour the mix into the loaf tin, level out and bake for 40 – 45 minutes until a skewer comes out clean.

  3. Once out of the oven, leave to cool. Make the icing by combining the icing sugar, vanilla paste,
    and water. 

  4. Too thick? Just add water ½ tsp at a time until you have a thick icing. 

  5. Spread over the top of the cake and enjoy.
