Line a loaf tin with parchment paper – we use 19cm x 9cm x 6cm.

Put all the cake ingredients into a bowl and beat together, using an electric hand whisk or a wooden spoon, until smooth and combined. Pour the mix into the loaf tin, level out and bake for 40 – 45 minutes until a skewer comes out clean.

Once out of the oven, leave to cool. Make the icing by combining the icing sugar, vanilla paste,
and water. -
Too thick? Just add water ½ tsp at a time until you have a thick icing.

Spread over the top of the cake and enjoy.
